Bison Burger with Cherry Aioli

Ingredients

  • Bison Burger:
  • Buns (ciabatta bread works great)
  • Balsamic onions (thinly sliced red onions, balsamic vinegar, brown sugar, salt, pepper)
  • Gorgonzola crumbles
  • Chukar® Cherry Aioli:
  • 1/4 cup Chukar® Bing Cherries
  • 1/3 cup Chukar® Cherry Pepper Jelly
  • 1 cup mayonnaise
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 Tablespoon brown sugar

Directions

  1. For cherry aioli, pulse Chukar® Bing Cherries in food processor until lightly chipped (about 30 pulses).
  2. Add mayonnaise, Chukar® Cherry Pepper Jelly, chili powder, salt, and brown sugar.
  3. Blend in food processor until well combined and smooth. Only small chunks of Northwest Bings should remain.
  4. Season Bison burger to preferred temperature and while burger is hot, slather with cherry aioli.
  5. Assemble burgers and add balsamic onions and Gorgonzola crumbles. If you have leftover aioli, it's a delicious dip for fries!
