Bison Burger with Cherry Aioli

Bison Burger:
- Buns (ciabatta bread works great)
- Balsamic onions (thinly sliced red onions, balsamic vinegar, brown sugar, salt, pepper)
- Gorgonzola crumbles

Chukar® Cherry Aioli:
- 1/4 cup Chukar® Bing Cherries
- 1/3 cup Chukar® Cherry Pepper Jelly
- 1 cup mayonnaise
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1 Tablespoon brown sugar
Directions
- For cherry aioli, pulse Chukar® Bing Cherries in food processor until lightly chipped (about 30 pulses).
- Add mayonnaise, Chukar® Cherry Pepper Jelly, chili powder, salt, and brown sugar.
- Blend in food processor until well combined and smooth. Only small chunks of Northwest Bings should remain.
- Season Bison burger to preferred temperature and while burger is hot, slather with cherry aioli.
- Assemble burgers and add balsamic onions and Gorgonzola crumbles. If you have leftover aioli, it's a delicious dip for fries!
