Cherry Blue-Cheese Salad

Ingredients
- 9 cups butter lettuce leaves
- 3 cups radicchio, chopped
- 1 endive, leaves separated
- ½ cucumber skinned and thinly sliced
- 4 ounces Chukar® Cherry Medley, rehydrated in ¼ cup Merlot wine
- ½ cup red onion, thinly sliced
- ⅓ cup extra-virgin olive oil
- 2 Tbsp red wine vinegar*
- 2 Tbsp fresh lemon juice
- 2 tsp Dijon mustard
- 2 tsp honey or sugar
- ½ tsp pepper
- ¾ cup crumbles gorgonzola or Rogue Blue Cheese
- Kosher salt to taste
- *Note: Steep red wine vinegar with 2 Tbsp Chukar® Tart Cherries prior to using on salad.
Directions
- In a large bowl, combine lettuce, radicchio, Chukar® Cherry Medley, and onion. Add oil and mix to coat. Mix vinegar, lemon juice, mustard, honey, and pepper. Add to salad and mix well.
- Spoon onto salad or dinner plates; sprinkle equally with cheese and add salt to taste.
