Savory Cherry Chicken Skewers

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 garlic clove
  • Extra virgin olive oil
  • 1/4 cup light coconut milk
  • Kosher salt, to taste
  • Fresh ground black pepper, to taste
  • 2/3 cup Chukar® Cherry Chipotle Sauce
  • 16 wooden skewers

Directions

  1. Soak wooden skewers in cold water for 20-30 minutes.
  2. Meanwhile, make tabletop dipping sauce. In a large saucepan over medium heat, lightly toast garlic in 1 tablespoon of olive oil.
  3. Add 3 tablespoons of Chukar® Cherry Chipotle Sauce and coconut milk.
  4. Stir and simmer on low for 10 minutes, then remove from heat and pour into a small bowl for dipping.
  5. While the sauce simmers, slice each chicken breast lengthwise into 4 pieces.
  6. Brush lightly with olive oil and sprinkle with kosher salt and pepper.
  7. Heat BBQ or stovetop grilling pan.
  8. Thread each chicken piece onto a skewer and brush generously with remaining Chukar® Cherry Chipotle Sauce.
  9. Cook 3 minutes per side or until lightly charred on the outside and cooked through.
  10. Serve with dipping sauce.
