Savory Cherry Chicken Skewers

Ingredients
- 4 boneless, skinless chicken breasts
- 1 garlic clove
- Extra virgin olive oil
- 1/4 cup light coconut milk
- Kosher salt, to taste
- Fresh ground black pepper, to taste
- 2/3 cup Chukar® Cherry Chipotle Sauce
- 16 wooden skewers
Directions
- Soak wooden skewers in cold water for 20-30 minutes.
- Meanwhile, make tabletop dipping sauce. In a large saucepan over medium heat, lightly toast garlic in 1 tablespoon of olive oil.
- Add 3 tablespoons of Chukar® Cherry Chipotle Sauce and coconut milk.
- Stir and simmer on low for 10 minutes, then remove from heat and pour into a small bowl for dipping.
- While the sauce simmers, slice each chicken breast lengthwise into 4 pieces.
- Brush lightly with olive oil and sprinkle with kosher salt and pepper.
- Heat BBQ or stovetop grilling pan.
- Thread each chicken piece onto a skewer and brush generously with remaining Chukar® Cherry Chipotle Sauce.
- Cook 3 minutes per side or until lightly charred on the outside and cooked through.
- Serve with dipping sauce.
