Cherry Chipotle Beef Jerky

Serves 4 - 6

Ingredients

  • 2 lbs beef, thinly sliced
  • 1 cup Worcestershire sauce
  • 1 cup Chukar® Cherry Chipotle Sauce
  • Juice of 1 lime
  • 1/2 cup soy sauce
  • 3 Tbsp brown sugar, packed
  • 1 1/2 tsp onion powder
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp red pepper flakes
  • 1 tsp cumin
  • 1/4 tsp ginger paste

Directions

  1. Cut meat to desired thickness. Place strips between two pieces of plastic wrap and beat with a rolling pin to tenderize the meat. Set aside.
  2. In a large bowl or gallon Ziploc bag, mix together Worcestershire sauce, Chukar® Cherry Chipotle Sauce, and soy sauce. Add all spices and lime juice, mix well. Place meat in marinade and stir making sure all of the meat is covered with liquid. Squeeze air out of Ziploc bag or cover bowl with plastic warp and let marinate overnight.
  3. To prepare the oven for drying, line the bottom of the oven with foil and remove all racks leaving only the top most rack inside the oven.
  4. Remove meat from marinade and lightly pat off the excess liquid with a paper towel.
  5. To dry meat: with the oven off, hang each meat strip from the top oven rack by sticking toothpicks through one edge of the meat and angling them between the slots of the oven rack so the toothpicks hold the weight of the meat. Set oven to 175 degrees F and let meat dry for 6-8 hours.
  6. When desired dryness has been reached, remove meat from oven, take out toothpicks, and enjoy!
  7. Note: to store jerky, place in a plastic Ziploc bag or freezer bag and remove as much air as possible. Store for up to 6 months.
