Cherry Chipotle Pork Loin Roast

Ingredients
- 2 pork tenderloins, trimmed of silverskin
- 2 tablespoons kosher salt
- 4 teaspoons turbinado sugar
- 2 teaspoons smoked salt
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic pepper
- 1 cup Chukar® Cherry Chipotle Sauce
Directions
- Preheat a charcoal grill to 350°-400° F.
- Mix the spices, salt, and sugar together in a bowl and set aside.
- Pat the tenderloins dry with paper towel and rub the tenderloins with spice mixture.
- Grill the tenderloins, turning occasionally, until they reach an internal temp of 145° (about 22-25 minutes).
- Brush with the Chukar® Cherry Chipotle Sauce and cook another minute per side, just enough to cook the sauce onto the pork.
- Let rest for 5 minutes, slice thin, and serve with the remaining sauce.
- If cooking in an oven rather than on the grill, heat oven to 400° F and cook 20-25 minutes until internal temperature of meat reaches 145° F. Do not turn the pork loin while cooking.
