Cherry Chipotle Rack O' Lamb

  1. Lamb:
  2. Preheat oven to 425° F.
  3. Cut rack of lamb into 2-3 rib sections, as even as possible.
  4. Salt and pepper the meat.
  5. Place 1 1/2 cups all-purpose flour on a plate with a lip.
  6. Whisk Chukar® Cherry Chipotle Sauce, 2 tablespoons flour, and egg together in medium bowl.
  7. In food processor, pulse 2 cups of Chukar® Pacific Northwest Energy Mix until it resembles course ground cornmeal. About 35-40 pulses. Place ground mix onto a plate with a lip.
  8. Take lamb and dredge in flour. Dip into Chukar® Cherry Chipotle Sauce mixture and let excess drip off. Lastly, cover with ground Chukar® Pacific Northwest Energy Mix.
  9. Bake on greased pan to desired temperature. Cook 12-50 minutes for medium-rare.
  10. Sauce:
  11. While lamb is baking, prepare the sauce.
  12. Heat butter and Chukar® Organic Rainiers in medium sauté pan on medium heat for two minutes.
  13. Add wine and Chukar® Cherry Pepper Jelly. Stir until well combined.
  14. Bring to a boil and simmer for 8-10 minutes, stirring frequently, until sauce thickens.
  15. Serve warm over the top of rack of lamb.
