Cherry Chipotle Rack O' Lamb

Ingredients

Lamb:
- 2 racks fresh cut lamb, cleaned and trimmed
- 1 1/2 cups + 2 tablespoons all-purpose flour
- Salt and pepper, to taste
- 3/4 jar Chukar® Cherry Chipotle Sauce
- 2 cups Chukar® Pacific Northwest Energy Mix
- 1 egg

Sauce:
- 1/4 cup wine
- 1/3 cup Chukar® Organic Rainiers
- 1 cup Chukar® Cherry Pepper Jelly
- 1 teaspoon butter
Directions

Lamb:
- Preheat oven to 425° F.
- Cut rack of lamb into 2-3 rib sections, as even as possible.
- Salt and pepper the meat.
- Place 1 1/2 cups all-purpose flour on a plate with a lip.
- Whisk Chukar® Cherry Chipotle Sauce, 2 tablespoons flour, and egg together in medium bowl.
- In food processor, pulse 2 cups of Chukar® Pacific Northwest Energy Mix until it resembles course ground cornmeal. About 35-40 pulses. Place ground mix onto a plate with a lip.
- Take lamb and dredge in flour. Dip into Chukar® Cherry Chipotle Sauce mixture and let excess drip off. Lastly, cover with ground Chukar® Pacific Northwest Energy Mix.
- Bake on greased pan to desired temperature. Cook 12-50 minutes for medium-rare.

Sauce:
- While lamb is baking, prepare the sauce.
- Heat butter and Chukar® Organic Rainiers in medium sauté pan on medium heat for two minutes.
- Add wine and Chukar® Cherry Pepper Jelly. Stir until well combined.
- Bring to a boil and simmer for 8-10 minutes, stirring frequently, until sauce thickens.
- Serve warm over the top of rack of lamb.
