Cherry Chipotle Ribs

Ingredients

  • Spare Ribs:
  • 2 full racks spare ribs
  • 1/2 jar Chukar® Cherry Chipotle Grilling Sauce
  • Rub: 1 Tbsp brown sugar, 3 Tbsp salt, 2 Tbsp chili powder, 1 Tbsp Hungarian paprika, 1 Tbsp fresh ground black pepper, 1/2 Tbsp ground sage, 1 tsp chipotle chili flakes
  • 1 cup wine or beer
  • Blueberry-Cherry Chipotle BBQ Sauce
  • Blueberry-Cherry Chipotle BBQ Sauce:
  • 1 cup fresh blueberries
  • 1/2 jar Chukar® Cherry Chipotle Grilling Sauce
  • 1 Tbsp butter
  • 2 tsp Worcestershire sauce
  • 2 Tbsp - 1/3 cup wine or beer plus juices from ribs cooking in the oven
  • Salt and pepper to taste

Directions

  1. For spare ribs, pre-heat oven to 335 degrees F. Remove membrane from the back of the ribs by gently prying and peeling away from the meat. You may have to peel it off in several pieces. Rub spice mixture on ribs and place them in a deep, oven safe dish. Pour beer or wine in dish, cover ribs with foil, and bake for 2-2.5 hours or until tender.
  2. In the meantime, make the Blueberry-Chipotle BBQ Sauce. Heat butter over medium in a sauté pan. Add blueberries and cook until they burst and begin to bubble. Then deglaze pan by adding Worcestershire sauce, the beer or wine, and the juice from the ribs that are cooking. Bring to a simmer, reduce heat and stir in 1/2 jar of Chukar® Cherry Chipotle Grilling Sauce. Let simmer until desired thickness. Add salt & pepper to taste.
  3. Fire up your grill when ribs are almost done. Once ribs are tender, remove from oven and baste with remaining 1/2 jar of Chukar® Cherry Chipotle Grilling Sauce.
  4. Grill glazed ribs for about 15-25 minutes, turning halfway through, until they are nicely caramelized.
  5. Remove from heat, cut into manageable portions and top with Cherry-Blueberry Chipotle BBQ Sauce.
