Cherry Lemon Bars

Ingredients

Crust
- 1 ½ Cups pastry flour
- ¾ tsp salt
- 6 Tbsp powdered sugar
- ¾ Cup cold butter, cut into 1" pieces

Filling
- 2 Cups sugar
- ¼ Cup flour
- 4 eggs
- juice of 3 large lemons
- 1 jar Chukar® Cherry Pie Filling
Directions

Make the Crust
- Stir together the flour, salt, and powdered sugar.
- Using a fork, cut in the butter until you have a crumbly mixture. Press the entire mixture firmly into a greased 9" x 13" glass baking dish and bake at 350°F for 15 minutes. Remove from oven.

Make the Filling
- In a bowl, stir together sugar & flour.
- In another bowl, beat eggs until well-combined. Beat in the sugar & flour mixture until sugar dissolves. Add lemon juice and mix well.

Bake
- Carefully pour the custard mixture evenly over the baked crust and bake 20 minutes until golden.
- Remove from oven and cool 30 minutes. Top with cherry filling, spreading to edges.
