Cherry Pancakes with Cherry Syrup

Ingredients

Cherry Pancakes
- 2 cups all purpose flour
- 2 tsp baking powder
- pinch of salt
- 1 Tbsp sugar (optional)
- 2 eggs
- 1 ½ - 2 cups milk
- 6 oz (1 bag) Chukar® Rainier Cherries
- 1 tsp vanilla extract (optional)
- 2 Tbsp melted butter, cooled

Cherry Syrup
- 1/2 cup Chukar® Sour Cherry Preserves
- 1 cup sugar
- 1 cup water
Directions

Cherry Pancakes
- In a bowl, mix dry ingredients: flour, baking powder, salt and sugar.
- In a separate bowl, beat eggs with milk and vanilla. Stir in melted butter.
- Stir milk mixture and Chukar® Rainier Cherries into dry ingredients. Mix only enough to moisten flour, some lumps are okay. Add more milk as needed to reach desired consistency.
- Heat a griddle or skillet to medium-low heat. Add butter or non-stick spray to pan.
- Ladle batter onto hot griddle. Cook until bubbles begin to form, then flip pancake gently and finish cooking until golden brown. Repeat with the rest of the batter.
- Serve hot with Cherry Syrup.

Cherry Syrup
- Combine Chukar® Sour Cherry Preserves, sugar and water in a small sauce pot.
- Stir mixture until sugar completely dissolves into the water.
- Bring to a simmer and cook for 3-5 minutes then remove from heat.
- Serve warm poured over Cherry Pancakes or transfer to a dish to serve on the side.
