Cherry Pancakes with Cherry Syrup

Ingredients

  • Cherry Pancakes
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • pinch of salt
  • 1 Tbsp sugar (optional)
  • 2 eggs
  • 1 ½ - 2 cups milk
  • 6 oz (1 bag) Chukar® Rainier Cherries
  • 1 tsp vanilla extract (optional)
  • 2 Tbsp melted butter, cooled
  • Cherry Syrup
  • 1/2 cup Chukar® Sour Cherry Preserves
  • 1 cup sugar
  • 1 cup water

Directions

  1. Cherry Pancakes
  2. In a bowl, mix dry ingredients: flour, baking powder, salt and sugar.
  3. In a separate bowl, beat eggs with milk and vanilla. Stir in melted butter.
  4. Stir milk mixture and Chukar® Rainier Cherries into dry ingredients. Mix only enough to moisten flour, some lumps are okay. Add more milk as needed to reach desired consistency.
  5. Heat a griddle or skillet to medium-low heat. Add butter or non-stick spray to pan.
  6. Ladle batter onto hot griddle. Cook until bubbles begin to form, then flip pancake gently and finish cooking until golden brown. Repeat with the rest of the batter.
  7. Serve hot with Cherry Syrup.

  9. Combine Chukar® Sour Cherry Preserves, sugar and water in a small sauce pot.
  10. Stir mixture until sugar completely dissolves into the water.
  11. Bring to a simmer and cook for 3-5 minutes then remove from heat.
  12. Serve warm poured over Cherry Pancakes or transfer to a dish to serve on the side.
