Cherry Preserve Muffins

Ingredients
- 1 cup all-purpose flour
- 1 1/4 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup Chukar® Sweet or Sour Cherry Preserves
- 1/3 cup vegetable oil
- 1/2 cup milk
- 1/2 cup sour cream
- 2 eggs
- 1 teaspoon vanilla extract

Streusel:
- 1/4 cup Chukar® Sweet or Sour Cherry Preserves
- 1/4 cup butter, melted
- 1/3 cup brown sugar
- 1/4 cup all-purpose flour
- 1/4 cup oats
Directions
- Preheat oven to 400 degrees. Mix the flour, baking powder, and salt in a medium mixing bowl. Whisk together wet ingredients thoroughly in another bowl. Combine wet and dry ingredients and gently mix until just combined, using as few strokes as possible.
- Spoon the batter evenly into lined cupcake tins. Add one teaspoon of Chukar® Sweet or Sour Cherry Preserves on top of the batter in each cup. Mix together streusel ingredients in a bowl and dived evenly among each of the cups. Once all the cups have been topped with streusel, place in the oven and bake about 14 minutes or until the tops are golden brown and a tooth pick comes out clean.
- Let the muffins cool for 15 minutes before removing them from the cupcake tin and serving.
