Cherry Quinoa Salad

Ingredients
- 1 cup quinoa
- 1 3/4 cups water
- 1/2 cup Chukar® Rainer Cherries
- 1/4 cup sesame seed oil
- 3 scallions (white bulb plus 3 inches of the green stems), sliced
- 1 cup Northwest Granny Smith Apples, diced
- 2-3 tablespoons fresh mint leaves, chopped
- 2-3 tablespoons lemon zest
- Salt
Directions
- Bring the quinoa and water to boil in a large saucepan.
- When water begins to boil, reduce the heat, cover the pan, and simmer for 12 minutes.
- Continue cooking until all the liquid has evaporated, up to 3 more minutes.
- Remove the pan from the burner, and spread the quinoa on a baking sheet to cool.
- After the quinoa has cooled completely, combine it with the remaining ingredients in a salad bowl.
- Serve as a lunch or dinner salad.
