Cherry Quinoa Salad

Ingredients

  • 1 cup quinoa
  • 1 3/4 cups water
  • 1/2 cup Chukar® Rainer Cherries
  • 1/4 cup sesame seed oil
  • 3 scallions (white bulb plus 3 inches of the green stems), sliced
  • 1 cup Northwest Granny Smith Apples, diced
  • 2-3 tablespoons fresh mint leaves, chopped
  • 2-3 tablespoons lemon zest
  • Salt

Directions

  1. Bring the quinoa and water to boil in a large saucepan.
  2. When water begins to boil, reduce the heat, cover the pan, and simmer for 12 minutes.
  3. Continue cooking until all the liquid has evaporated, up to 3 more minutes.
  4. Remove the pan from the burner, and spread the quinoa on a baking sheet to cool.
  5. After the quinoa has cooled completely, combine it with the remaining ingredients in a salad bowl.
  6. Serve as a lunch or dinner salad.
