Cherry Tart Bites

Ingredients

  • 1 1/4 cups unsalted butter, softened
  • 1 3/4 cups powdered sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon pure lemon extract
  • 1 teaspoon pure vanilla extract
  • 1 egg
  • 2 1/2 cups all-purpose flour
  • 1/4 cup coarse ground sugar
  • Chukar® Cherries Jubilee Dessert Sauce

Directions

  1. Preheat oven to 350° F.
  2. In a large mixing bowl, beat butter for 30 seconds, gradually adding 1 cup powdered sugar, baking powder, and salt.
  3. Beat in vanilla, egg, and lemon extract. Beat in as much of the flour as you can. Using a spoon, stir in the remaining flour and coarse ground sugar.
  4. Place remaining 3/4 cup powdered sugar into shallow dish. Shape dough into 1-inch balls; roll in powdered sugar.
  5. Press each ball into bottom and sides of muffin cups.
  6. Spoon Chukar® Cherries Jubilee Dessert Sauce into each muffin cup.
  7. Bake about 12 minutes or until pastry is browned.
  8. Sprinkle with additional coarse sugar. Cool 10 minutes in pan.
  9. Using sharp knife, loosen tarts, transfer to wire rack, and serve when cool.
