Savory Cherry Wine Sauce

Serves 2 - 3

Ingredients

  • 2 - 4 ounces Chukar® Dried Cherries
  • 1 bottle good quality red table wine
  • 1 Tbs cane sugar
  • 1 Tbs unsalted butter
  • Kosher salt
  • Fresh ground pepper

Directions

  1. Pour a bottle of good quality red table wine (such as Merlot, Syrah, or Cabernet) into a saucepan.
  2. Add a handful of Chukar® Dried Cherries.
  3. Bring to a boil and lower temperature to a steady simmer. Simmer liquid until the volume reduces by half.
  4. Add 1 Tablespoon sugar, 1 Tablespoon unsalted butter, a pinch of kosher salt, and fresh ground pepper to taste. Stir.
  5. Suggested Use: Top rice pilaf, add to your favorite stuffing recipe, or spoon over roast chicken, duck, pork loin, or fish prior to serving. It's divine with our [Halibut a la Chukar].
  6. Optional: Finish with a twig of rosemary or parsley.
