Chocolate Cherry Tartlets

Ingredients

Tart Shells
- 2 ¾ all purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 1 cup butter (softened)
- 1 ½ cups white sugar
- 1 egg
- 2 tsp vanilla extract

Filling
- 2 cups dark chocolate chips or baking chocolate roughly chopped
- ½ cup Chukar® Dessert Cherries (chopped)
- ½ cup juice from Chukar® Dessert Cherries
Directions
- Preheat oven to 375° F.
- In small bowl combine flour, baking soda, baking powder and salt.
- In a large bowl combine softened butter and sugar; beat until creamy. Then beat in egg and vanilla. Slowly add in dry ingredients until well combined.
- Grease a mini muffin/cupcake pan. Place about 1 Tablespoon of dough into each cup, and press up sides, making a shell. Repeat in all cups.
- Bake for 8-10 minutes or until golden brown. Let pan cool for 15+ minutes before removing your tart shells.
- Set aside and begin making the filling.
- Heat chopped Chukar® Dessert Cherries and juice from Chukar® Dessert Cherries until simmered.
- Place chocolate in a bowl. Remove cherries from heat and pour over chocolate. Whisk until chocolate is melted and well combined with cherries. Let filling cool 20-30 minutes.
- Pour filling into each tart shell and refrigerate for 1 hour.
- Serve with an extra Chukar® Dessert Cherries on top!
