Chocolate Cherry Tartlets

Ingredients

  • Tart Shells
  • 2 ¾ all purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup butter (softened)
  • 1 ½ cups white sugar
  • 1 egg
  • 2 tsp vanilla extract
  • Filling
  • 2 cups dark chocolate chips or baking chocolate roughly chopped
  • ½ cup Chukar® Dessert Cherries (chopped)
  • ½ cup juice from Chukar® Dessert Cherries

Directions

  1. Preheat oven to 375° F.
  2. In small bowl combine flour, baking soda, baking powder and salt.
  3. In a large bowl combine softened butter and sugar; beat until creamy. Then beat in egg and vanilla. Slowly add in dry ingredients until well combined.
  4. Grease a mini muffin/cupcake pan. Place about 1 Tablespoon of dough into each cup, and press up sides, making a shell. Repeat in all cups.
  5. Bake for 8-10 minutes or until golden brown. Let pan cool for 15+ minutes before removing your tart shells.
  6. Set aside and begin making the filling.
  7. Heat chopped Chukar® Dessert Cherries and juice from Chukar® Dessert Cherries until simmered.
  8. Place chocolate in a bowl. Remove cherries from heat and pour over chocolate. Whisk until chocolate is melted and well combined with cherries. Let filling cool 20-30 minutes.
  9. Pour filling into each tart shell and refrigerate for 1 hour.
  10. Serve with an extra Chukar® Dessert Cherries on top!
