  • ½ cup frozen mango
  • Zest of one lime
  • Coconut flakes, optional
  • Cherry Chocolate Nice Cream
  • 1 heaping cup frozen banana slices
  • ½ cup Chukar® Rainier Cherries
  • ¼ cup Chukar® Tart Cherries
  • ¼ cup full fat coconut milk
  • 2-3 Tbs cocoa powder
  • Handful of dark chocolate chips
  • ¼ tsp salt, optional
  • ¼ tsp vanilla bean paste, optional

Directions

  1. Recipe Prep
  2. Slice 3-4 browning bananas into 1 in slices and freeze on wax paper over night.
  3. Soak dried cherries in boiling water for 1 hour or in room temperature water over night prior to making nice cream.
  4. Tropical Cherry Lime Nice Cream
  5. Drain Chukar® Tart Cherries from soaking water. In a high speed blender, blitz soaked cherries until broken into small pieces and mostly smooth.
  6. Add bananas, coconut milk, frozen mango and lime zest to cherries in blender and puree until smooth. Nice cream should resemble the consistency of soft serve ice cream.
  7. Remove nice cream from blender and stir in coconut flakes if desired.
  8. Serve immediately. For firmer nice-cream, transfer from blender to a loaf pan and freeze for 30 minutes. Scoop with an ice cream scoop to serve.

  13. Drain Chukar® Tart Cherries from soaking water. Remove nice cream from blender and stir in soaked cherries and chocolate chips.
  14. Serve immediately. For firmer nice-cream, transfer from blender to a loaf pan and freeze for 30 minutes. Scoop with an ice cream scoop to serve.
  15. Notes
  16. Can be made using blender or food processor.
  17. If nice-cream is left over, it can be stored in an air tight container for up to 2 days. Before it can be enjoyed again, it will need to soften at room temp and may need to be re-whipped in a blender or food processor. Best served fresh.
