Cherry Pepper Jelly Glazed Pork Chop

Ingredients
- 4 pork chops (bone in, about 1 inch thick)
- ⅔ cup Chukar® Cherry Pepper Jelly
- 1 Tbsp fresh diced onion
- ½ Tbsp fresh minced ginger
- ¼ cup wine or beer
- ½ lemon, juiced (approximately 2 Tbsp)
- 2 Tbsp butter
- 1 tsp fresh diced rosemary
- Salt & Pepper
Directions
- Preheat grill to 375°.
- Heat sauté pan over medium heat. Melt 1 Tbsp butter then add diced onion, minced ginger and a pinch of salt & pepper. Sauté until onions become soft.
- Add rosemary, then deglaze the pan with wine or beer. Reduce liquid to half.
- Add Chukar® Cherry Pepper Jelly, fresh lemon juice and remaining butter. Bring to a simmer, stirring frequently. Let simmer for 5 minutes over low heat.
- Cover pan and remove from heat. Set aside.
- Separate out ¼ cup of glaze. Season pork chops to taste with salt and pepper.
- Grill pork chops 5-7 minutes on either side. Brush pork chops with glaze then place back on grill. Grill each side for an additional 2-3 minutes, brushing with glaze each turn, until pork chops are cooked thoroughly.
- Serve warm with additional glaze on top or on the side.
