Grilled Salmon with Cherry Medley Sauce

Ingredients

Salmon:
- 2 cups Chukar® Cherry Medley
- 2 cups Pinot Noir or Sangiovese (whatever wine you plan on enjoying with dinner is best)
- 1/2 cup vegetable stock
- 1/2 lemon (lime or other citrus)
- 1 cup brown sugar
- 2 tablespoons butter
- 1 tablespoon flour
- Salt and pepper, to taste

Sauce:
- 4 - 6 portions of salmon (or other hearty fish, like trout or steelhead)
- 1/2 lemon (lime or other citrus)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
Directions

For sauce:
- In small pan, melt butter and whisk in flour. Heat until golden brown. Remove from heat and set aside.
- Roughly chop Chukar® Cherry Medley.
- Bring Chukar® Cherry Medley, wine, stock, juice and zest of 1/2 lemon, sugar, and a pinch of salt and pepper to a boil.
- Let simmer for 8-10 minutes, stirring frequently.
- Stir in butter/flour mixture from earlier and let simmer until thickened.
- Salt and pepper to taste.

For salmon:
- Zest and juice 1/2 lemon in medium bowl, combine with salt, pepper, and olive oil. Whisk together until well combined.
- Marinate salmon in lemon mixture for 10 minutes.
- Heat up grill and cook salmon to desired doneness.
- Serve salmon with warm Cherry Sauce drizzled over.
