Summer Melon Cupcake with Yogurt Cherry Whip

Ingredients
- 1 melon of choice (Cantaloupe, Watermelon, or Honeydew Melon)
- Sea Salt
- Chukar® Dessert Cherries
- 3/4 cup heavy cream
- 1/4 cup Greek yogurt
- 1/2 teaspoon cream of tartar
- 3 tablespoons confectioner's sugar
- 1 tablespoon fresh squeezed lemon juice
Directions
- Combine heavy cream, Greek yogurt, cream of tartar, confectioner's sugar, lemon juice, and 1 oz. Chukar® Dessert Cherries juice in a bowl and whisk until stiff peaks form. Make sure all ingredients are cold. Use metal bowl and place in freezer with whisk 20 minutes prior to use.
- Peel and seed melon(s) of choice.
- Slice melons into even slices, about 3/4" thick and at least as wide as your cookie cutter shape of choice.
- Cut out shapes in the melon slices.
- Take out whip from refrigerator, and pipe on top of melon cakes. If you have a pastry bag, use your tip of choice to make fun designs. If you don't have a pastry bag, fill a plastic bag with whip, and snip a hole out of one of the corners and squeeze out of the opening.
- Sprinkle with sea salt and add one of our Chukar® Dessert Cherries on top!
