Pumpkin Cherry Cream Cheese Bread Pudding

Ingredients

  • 6 cups French bread, cut into 1 in cubes
  • ½ tsp cloves
  • ¼ cup Chukar® Tart Cherries
  • 4 oz cream cheese, cut into small cubes
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ¼ tsp ground ginger
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 4 egg whites
  • ½ cup brown sugar
  • 1 tsp vanilla
  • ½ cup Chukar® Sour Cherry Pie Filling
  • ½ cups whole milk
  • ⅔ cup pureed pumpkin
  • 1 egg
  • Optional: Vanilla ice cream

Directions

  1. Preheat the oven to 375°F.
  2. In large bowl, whisk together egg whites, egg, pumpkin, vanilla, milk, and spices until well combined. Stir in brown sugar and Chukar® Sour Cherry Pie Filling.
  3. Spread half of the bread cubes in an oven safe baking dish evenly covering the bottom. Pour half of the wet mixture on top of the bread.
  4. Sprinkle Chukar® Tart Cherries and half of the cream cheese cubes over the top of the bread cubes.
  5. Spread the rest of the bread cubes on top of the first layer then pour the remaining liquid mixture over the top of the bread. Sprinkle the remaining cream cheese cubes over the bread.
  6. Let the dish sit for 5 to 10 min so that the bread soaks up some of the excess liquid.
  7. Bake dish for 20 to 25 min or until light golden brown. Serve hot with a scoop of vanilla ice cream on top.
