Savory Shrimp Tacos

Ingredients
- 8-10 corn tortillas
- 1 jar Chukar® Peach Cherry Salsa
- 1 cup shredded red cabbage
- ½ cup shredded carrot
- 1 ½ lbs precooked cocktail shrimp, peeled and deveined
- 2 Tbs Chukar® Cherry Chipotle Grilling Sauce
- 1 tsp Chili Powder
- Salt and pepper to taste
- 1/4 cup loosely packed fresh cilantro leaves, coarsely chopped
- Feta cheese for topping
- Fresh lime to garnish
Directions
- Heat corn tortillas in a large skillet over medium heat until slightly browned. Lay tortillas on a serving dish.
- Spoon desired amount of Chukar® Peach Cherry Salsa in a line across each tortilla (try 1-2 Tablespoons if unsure).
- Place even amount of red cabbage and carrot onto each tortilla.
- Remove tails from shrimp. Place shrimp in a bowl and toss with Chukar® Cherry Chipotle Grilling Sauce.
- Add shrimp to skillet over medium heat. Cook until warmed through.
- If you see a lot of liquid at the bottom of the pan, drain the shrimp in a colander, then return to skillet and stove. Add chili powder and salt and pepper to taste. Sauté for 1-2 minutes more.
- Place an even amount of shrimp onto each tortilla.
- Sprinkle tacos with cilantro leaves and feta cheese.
- Serve immediately with lime wedges for garnish.
