Six Week Bran Muffins

Ingredients

  • 6 cups bran
  • 2 cups boiling water
  • 1 cup melted shortening
  • 3 cups sugar
  • 4 eggs beaten
  • 4 cups buttermilk
  • 2 1/2 cups all-purpose flour
  • 2 1/2 cups whole wheat flour
  • 5 teaspoons baking soda
  • 2 teaspoons salt
  • Orange or apple juice, for soaking
  • 1/2 cup Chukar® Cherry Medley Mix

Directions

  1. Pour water over 2 cups of bran and set aside.
  2. Prep Chukar® Cherry Medley Mix by soaking fruit in orange or apple juice for 10 minutes then drain & pat dry.
  3. Mix 4 cups bran with sugar, eggs, and buttermilk. Add shortening.
  4. Mix in flour, salt, and baking soda. Then add bran and water mixture.
  5. Add chopped nuts or tart apples if desired.
  6. Fill muffin tins and add a few dried cherries to the top of each.
  7. Bake at 400° F for 20 minutes.
