Sour Cherry Glazed Chicken with Baked Apples & Squash

Ingredients

  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1 jar Chukar® Sour Cherry Preserves
  • 2 tablespoons packed brown sugar
  • 1/2 cup chopped walnuts
  • 2 tablespoons water
  • 1 large red apple, chopped into 1" cubes
  • 1 large green apple, chopped into 1" cubes
  • 1/2 large butternut squash, peeled & chopped into 1" cubes
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon lemon juice
  • 2 lbs. boneless, skinless chicken thighs
  • freshly ground salt & pepper to taste

Directions

  1. Preheat oven to 350 degrees Fahrenheit. In a small bowl, combine brown sugar, cinnamon, and cloves. Set aside. In a large bowl, combine apples, squash, and walnuts with spice mixture. Toss together until squash and apples are fully coated. Set mixture aside.
  2. In another small bowl, combine 1/2 jar of Chukar® Sour Cherry Preserves with two tablespoons of water. Add lemon juice and mix until well combined. Chop rosemary and add to sour cherry mixture. Set mixture aside. Trim excess fat from chicken thighs. Lightly salt and pepper each side.
  3. Spread apple-squash mixture across the bottom of a 5-quart casserole dish in one even layer. Lay chicken thighs evenly on top of the apple-squash layer and cover with sour cherry mixture.
  4. Bake at 350 degrees for 45 minutes or until internal temperature of chicken reaches 160 degrees and apples and squash are soft. Serve with a green salad and fresh bread.
