Cherry Yam Casserole

Ingredients

  • 4 yams, medium sized
  • 1/2 cup Chukar® Bing Cherries
  • 1/3 cup orange juice, warm
  • 2 tablespoons light brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons light brown sugar, for topping
  • 1/2 teaspoon walnuts or pecans, for topping
  • 1 cup mini marshmallows, for topping

Directions

  1. Scrub the yams clean and use a knife to prick them a few times all over.
  2. Roast the yams in a 350°F oven for 1 hour 20 minutes.
  3. Allow the yams to cool to the touch.
  4. In a medium bowl, heat the orange juice in the microwave.
  5. Add the Chukar® Bing Cherries to the warm juice and reconstitute.
  6. Peel the yams and add to the bowl with the orange juice and cherries.
  7. Mash the yams with a fork.
  8. Add the brown sugar, cinnamon, nutmeg, salt, and pepper and stir.
  9. Pour mixture into an 8x8-inch baking dish, or separate into ramekins for individual servings.
  10. Sprinkle the brown sugar, nuts, and marshmallows evenly over the top of the casserole.
  11. Bake in 300°F oven for 20 minutes.
  12. Serve warm.
