Cherry Yam Casserole

Ingredients
- 4 yams, medium sized
- 1/2 cup Chukar® Bing Cherries
- 1/3 cup orange juice, warm
- 2 tablespoons light brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons light brown sugar, for topping
- 1/2 teaspoon walnuts or pecans, for topping
- 1 cup mini marshmallows, for topping
Directions
- Scrub the yams clean and use a knife to prick them a few times all over.
- Roast the yams in a 350°F oven for 1 hour 20 minutes.
- Allow the yams to cool to the touch.
- In a medium bowl, heat the orange juice in the microwave.
- Add the Chukar® Bing Cherries to the warm juice and reconstitute.
- Peel the yams and add to the bowl with the orange juice and cherries.
- Mash the yams with a fork.
- Add the brown sugar, cinnamon, nutmeg, salt, and pepper and stir.
- Pour mixture into an 8x8-inch baking dish, or separate into ramekins for individual servings.
- Sprinkle the brown sugar, nuts, and marshmallows evenly over the top of the casserole.
- Bake in 300°F oven for 20 minutes.
- Serve warm.
